4. Herrenzwieback





You need:
# 2 eggs
# 140 g powdered sugar
# 210 - 240 g flour, depending on the size of the eggs
# chopped nuts (we prefer hazelnuts), chopped chocolate (dark), candied fruit and candied lemon peel (in little cubes), raisins; there are no fixed amounts here.





# Beat the eggs with a hand mixer until they're foamy.
# Add sugar.
# Add (with a spoon) nuts, chocolate, candied fruit and raisins.




# In the end it should look something like this:




# Add about half of the flour.
# Pour some of the remaining flour on whatever surface you're using, and then the mixture on top of that.




# This is not so much the tricky as the sticky part. Knead the rest of the flour into the dough. The dough will always be soft and sticky on the inside, but in the end you should be able to handle it.




# Cut in two halves (the picture is misleading, we made more), form two long loaves. Lifting them on the baking tray is also a bit tricky, you might have to push them into shape again. It should look like this:




# Bake at ca. 180 degrees until they are light brown on the outside.
# Wait a bit, then cut into slices while still warm (but not too hot, or they'll tear).




# Finished! These are cookies you shouldn't bake too early, or keep too long, because they'll only get harder with time.
